Understanding Phycocyanin Specifications: Color Value Explained

Phycocyanin is standardized using color value (E1% 1cm) , which measures the absorbance at 618nm. This metric is the industry benchmark for determining pigment strength and appropriate application

Grade

Color Value (E1% 1cm)

Recommended Applications

E3

≥3.0

Entry-level food coloring; cost-effective for mass production

E6

≥6.0

General food and beverage applications

E18

≥18.0

Most widely used grade; optimal balance of cost and performance

E25

≥25.0

Premium food products; health supplements

E30

≥30.0

Highest concentration; medical and nutritional applications

E18 is the industry's most popular specification due to its cost-effectiveness and excellent solubility, making it the go-to choice for most commercial applications. Higher color value grades like E25 and E30 contain a higher concentration of the active phycocyanin complex, with fewer other ingredients, and are typically reserved for medical, nutritional, and premium applications.

Solubility and Stability Profile

Phycocyanin demonstrates:

100% water-soluble—dissolves readily in aqueous systems for clear, vibrant solutions

pH stability—maintains color integrity in the pH range of 4.5 to 8.0

Heat stability—retains color value at 60°C for up to 3.5 hours; stability decreases under strong acidic or alkaline conditions

Photostability—maintains approximately 91.4% of color value after 7 days under 6000 lux illumination

Critical Processing Guidelines

Temperature: Add during cool-down phase; avoid prolonged exposure above 60°C

pH: Maintain final product pH between 4.5 and 8.0 for optimal stability

Light: Protect from direct light using opaque or amber packaging for finished products

Processing: Pre-dissolve in water before incorporating into formulation

Main Applications Across Industries

Food and Beverage
The food and beverage industry is the largest market for phycocyanin, driven by the global shift away from synthetic blue dyes like Brilliant Blue (Blue 1). Common applications include:

Confectionery—candies, gummies, and frostings

Dairy and Frozen Desserts—ice cream, yogurt, and milkshakes

Beverages—sports drinks, smoothies, flavored waters, and carbonated soft drinks

Baked Goods—frostings and decorative applications

Cosmetics and Personal Care
Phycocyanin's natural origin and antioxidant properties make it a desirable addition to skincare formulations:

Anti-aging creams and serums—provides both color and functional benefits

Natural color cosmetics—lip balms, eyeshadows, and blushes

Body care products—lotions, shower gels, and bath products

Nutritional Supplements
Premium grades (E25, E30) are increasingly used in health supplements, where phycocyanin contributes both natural color and documented functional properties, including antioxidant and immune-supporting benefits
